It’s a process that takes more time and is more labor-intensive but yields the highest-quality product.
Once bottled, the champagne is aged for four to five years in cool cellars located 100 feet beneath the surface. Another deviation from modern practices includes the daily process of hand-turning each bottle to gather and discard the sediment in the bottle. After about a month, the bottles are corked (again, by hand) and readied for sale.
